Ingredients

The ingredients are:
  • 1 medium yellow onion
  • 2 to 3 cloves garlic
  • Olive oil
  • 150 to 200 grams fresh baby spinach
  • 200 grams ricotta cheese
  • 1 large egg (light beaten)
  • 150 grams feta cheese
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon chilli flakes
  • 1/4 teaspoon ground pepper
  • 1 teaspoon salt
  • Puff pastry (enough for one 9 inch pie)

How to Make

  • Step 1: Preheat the oven to 180 C (350 F).

  • Step 2: Chop the onions and mince the garlic. Saute in a bit of olive oil until translucent.

  • Step 3: Add in the spinach and cook till wilted. Set aside to cool slightly.

  • Step 4: In a medium sized bowl, combine the ricotta cheese and egg. Whisk till smooth. Mix in feta and seasonings, stir to combine. Add in the spinach and onion mixture and blend.

  • Step 5: Line a 9-inch pie plate with puff pastry, then cover the bottom and sides entirely.

  • Step 6: Spread the spinach-cheese mixture atop the prepared pie plate, and fold over the edges of the puff.

  • Step 7: Bake about 30 minutes or until the edges of the puff are golden brown and the center is set.

  • Step 8: Cool slightly.
