Step 1: Preheat the oven to 180 C (350 F).
Step 2: Chop the onions and mince the garlic. Saute in a bit of olive oil until translucent.
Step 3: Add in the spinach and cook till wilted. Set aside to cool slightly.
Step 4: In a medium sized bowl, combine the ricotta cheese and egg. Whisk till smooth. Mix in feta and seasonings, stir to combine. Add in the spinach and onion mixture and blend.
Step 5: Line a 9-inch pie plate with puff pastry, then cover the bottom and sides entirely.
Step 6: Spread the spinach-cheese mixture atop the prepared pie plate, and fold over the edges of the puff.
Step 7: Bake about 30 minutes or until the edges of the puff are golden brown and the center is set.
Step 8: Cool slightly.
