Ingredients

The ingredients are:
  • 2 1/2 cups brown sugar (light brown, packed)
  • 1 3/4 cups all purpose flour
  • 3/4 cup cocoa powder (dark, unsweetened)
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk (or sour milk)
  • 1 cup coffee (strong coffee, or 1 cup water + 2 tsp instant espresso powder)
  • 1/2 cup oil (vegetable oil)
  • 2 teaspoons vanilla extract

How to Make

  • Step 1: Preheat the oven to 350 F or 180 C.

  • Step 2: Butter two 9-inch baking pans (or a 9x13 inch pan), line the bottom with parchment paper and dust with flour.

  • Step 3: In a large bowl, combine the sugar, flour, cocoa, baking powder, soda and salt- whisk until incorporated.

  • Step 4: Make a well in the center of the mixture and add in the eggs, buttermilk. Whisk to combine.

  • Step 5: Add the coffee, oil and vanilla and continue mixing until everything is well incorporated.

  • Step 6: Divide the batter between the two pans.

  • Step 7: Bake for 30-35 minutes or until a toothpick inserted comes out almost clean or with a few moist crumbs.

  • Step 8: Cool the cakes completely before frosting.
