Ingredients

The ingredients are:
  • 1 whole (40 grams) Chorizo sausage (cut into slices)
  • 1 can (400 grams) garbanzo beans (drained and rinsed)
  • 1 can (400 grams) tomatoes (chopped)
  • Salt & freshly ground black pepper
  • 2 tablespoons fresh chopped parsley (flat leaf, plus extra to serve)
  • 2 tablespoons fresh chopped oregano (plus extra to serve)
  • 4 bread slices (sourdough bread)

How to Make

  • Step 1: Place the sausage slices in a cold pan and slowly bring them to heat until the fat has rendered and slices are slightly coloured and then add chickpeas and tomatoes.

  • Step 2: Bring these to a simmer and allow them to thicken up and taste and check the seasoning and add the herbs.

  • Step 3: Grill/broil or toast the sourdough bread and when done top with a portion of mixture and add extra chopped herbs if desired.
