Ingredients

The ingredients are:
  • 1/4 cup soy sauce
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 4 large boneless skinless chicken breasts (cut into 1/2-inch strips)
  • 1 small green bell pepper (or red sweet bell pepper, cut in 1-inch squares)
  • 1 whole lime (cut in 8 wedges, optional)
  • PEANUT SAUCE
  • 3 tablespoons peanut butter
  • 2 teaspoons brown sugar
  • 1/2 teaspoon cornstarch
  • 1/4 cup buttermilk (or nonfat plain yogurt)
  • 2 teaspoons soy sauce

How to Make

  • Step 1: Combine soy sauce, lime juice and garlic powder in a plastic bag.

  • Step 2: Add chicken to the bag, place bag in a bowl and marinate in refrigerator overnight, turning bag occasionally.

  • Step 3: Drain, reserving marinade.

  • Step 4: Thread marinated chicken on skewer alternately with pepper squares.

  • Step 5: Broil or grill 4-5 inches from heat about 5-7 minutes, until chicken is tender, turning once and occasionally brushing on marinade.

  • Step 6: Serve with lime wedges and peanut sauce.

  • Step 7: To make peanut sauce:

  • Step 8: In small saucepan over medium heat stir togher butter, sugar and cornstarch until blended. Gradually stir in buttermilk/yogurt, soy sauce and hot pepper sauce.

  • Step 9: Bring to a simmer and cook 1 minute.
