  • 3/4 cup molasses
  • 1/3 cup brown sugar
  • 1/2 cup butter-flavor shortening
  • 2 large eggs
  • 1/2 cup boiling water
  • 1/2 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • Whipped cream, for garnish

How to Make

  • Step 1: Preheat oven to 350 degrees and grease a 9 x 9 pan, preferably a shiny one.

  • Step 2: Bring water to a boil and stir in baking soda. Whisk dry ingredients and set aside.

  • Step 3: In mixer, cream molasses, sugar, shortening and eggs. Add dry ingredients, alternating with boiling water, mixing well.

  • Step 4: Bake for 35 minutes, or until done.
