  • 2 large eggs (beaten)
  • 1 cup mashed banana
  • 1 teaspoon baking soda (mixed with)
  • 3 tablespoons buttermilk
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 4 ounces walnuts, diced

How to Make

  • Step 1: Preheat oven to 350 degrees. Grease and flour a loaf pan or grease a muffin tin.

  • Step 2: Cream sugar and shortening, beat in eggs, then bananas. Combine baking soda with milk and add to creamed mixture.

  • Step 3: Whisk flour with salt and spices, add a little at a time to creamed mixture, beating well. Stir in nuts and pour into prepared pan.

  • Step 4: For loaf, bake for 35 minutes, then cover loosely with foil and continue to bake 15-20 minutes or until done. Insert a knife in the middle, if knife comes out clean, loaf is done.

  • Step 5: For muffins, bake 23 minutes or until done. Test doneness with a toothpick. Brush muffins with simple syrup while warm, if desired.
