  • 100 grams rice vermicelli (dried noodles)
  • 2 cups cooked chicken, shredded
  • 1 large carrot (peeled cut into matchssticks)
  • 1/2 cup fresh mint (leaves)
  • Chili garlic dressing (Vietnamese, 1/3 cup)
  • Iceberg lettuce (leaves)

How to Make

  • Step 1: Place noodles in a large heatproof bowl and cover with boiling water and stand for 5 minutes or until softened and drain and then rinse under cold water and drain and return to the bowl.

  • Step 2: Add chicken, carrot, mint and dressing and toss to combine.

  • Step 3: Divide mixture between lettuce leaves and serve.
