  • 4 cups green tomatoes (cut into 1/8 inch slices)
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 4 tablespoons cornstarch
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • Boiling water

How to Make

  • Step 1: Pour boiling water over tomatoes to cover 3 minutes, drain. Pour over lemon juice and vanilla, mix.

  • Step 2: Mix spices, salt, flour and corn starch; mix into tomatoes toss like apples. Pour into 1 pie crust. Dot with butter.

  • Step 3: Top with other pie crust, vent.

  • Step 4: Bake 60 minutes at 400 degrees, cool.
