Step 1: Preheat oven to 425F
Step 2: Core, and slice apples. Place in large bowl and toss with lemon juice and vanilla.
Step 3: In separate mixing bowl, combine sugar, brown sugar, flour, allspice, cinnamon, and nutmeg. Add dry ingredients to apples and stir well.
Step 4: Spoon mixture into bottom unbaked pie shell. Dot with butter. Top with remaining crust, sealing edges.
Step 5: Cut vents in top crust, then brush with cream.
Step 6: Place the pie onto a baking sheet.
Step 7: Bake (450 degrees) for 15 minutes.
Step 8: Reduce temperature to 350 degrees and continue baking for 40 minutes or until apples are fork-tender but not mushy.
