Ingredients

The ingredients are:
  • 2 pounds small white potatoes (peeled or peel left on, sliced in half or use really small new baby potatoes)
  • 2 garlic bulbs (cloves separated from bulb and skin removed, left whole)
  • Olive oil (as desired)
  • 1 tablespoon fresh rosemary
  • Salt and pepper (to taste)

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: Wash and scrub potatoes. Cut in potatoes in half.

  • Step 3: Spray a baking dish with the cooking spray.

  • Step 4: Place the potatoes and garlic in baking dish. Drizzle the potatoes and garlic cloves with a GENEROUS amount of olive oil then mix to coat. Sprinkle with rosemary, and salt and pepper, stir to mix well. Refrigerate for 2 hours tossing frequently while chilling.

  • Step 5: Bake uncovered for 20 to 35 minutes, stirring occasionally.
