Ingredients

The ingredients are:
  • 700 grams sweet potato (kumara, cut into 3 cm pieces)
  • 1 1/2 tablespoons oil (vegetable oil or olive oil)
  • 1/2 cup parsley (flat leaf coarsely chopped)
  • 2 tablespoons chives (chopped)
  • 1 tablespoon lemon juice

How to Make

  • Step 1: Preheat oven to 220C (200C fan forced).

  • Step 2: Line a baking tray with baking paper and place kumara on prepared tray and drizzle with half the oil and bake for 20 minutes or until tender.

  • Step 3: Combine kumara with remaining ingredients in a medium bowl and gently mix together.

  • Step 4: Divide onto plates.
