The ingredients are:
  • 1 1/2 cups white rice (cooked, warm)
  • 1/2 cup dried apricots (chopped)
  • 1/4 cup currants
  • 1/4 cup walnuts (chopped)
  • 1 cup low-fat evaporated milk
  • 1 1/2 teaspoons ground cinnamon
  • 1 tablespoon granulated sugar (or sugar substitute)

How to Make

  • Step 1: Preheat oven to 180 degree Celsius.

  • Step 2: Place the rice in an ovenproof pie dish.

  • Step 3: Add the apricots, currants and walnuts.

  • Step 4: Stir the milk through and blend in the cinnamon.

  • Step 5: Bake for 15 to 20 minutes or until warmed right through; stir halfway through the cooking time.

  • Step 6: Stir in sugar or substitute and rewarm for 5 minutes.

  • Step 7: Cover with foil (or lid) and allow to stand for 5 minutes before serving.
