Ingredients

The ingredients are:
  • 3 pounds stewing beef (lean, cut into 1 1/2 inch cubes)
  • 1 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • 1/2 cup butter, melted
  • 2 1/2 pounds small white onions (peeled, or larger onion, cut in chunks)
  • 1 can (6 ounce) tomato paste
  • 1/2 cup red wine (table wine)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon brown sugar
  • 1 clove garlic, pressed
  • 1 bay leaf
  • Cinnamon stick (1 piece)
  • 1/4 teaspoon cumin
  • 1/2 teaspoon whole cloves
  • 2 tablespoons raisins

How to Make

  • Step 1: Season the beef with salt and pepper.

  • Step 2: Place butter in the bottom of a large crockpot

  • Step 3: Add the meat and turn to coat with butter.

  • Step 4: Arrange the onions over the meat.

  • Step 5: Mix the tomato paste through the garlic, and pour over the meat and onions, but do not stir.

  • Step 6: Add the bay leaf through the raisins; do not stir.

  • Step 7: Simmer on low 8-10 hours.

  • Step 8: At serving time, remove the bay leaf, cinnamon stick and cloves and stir the stifado gently to blend.
