Ingredients

The ingredients are:
  • 1 cup fresh mushrooms, sliced (I used button or small cup)
  • 1 tablespoon butter
  • 1 tortilla (10-inch, to fit frypan or skillet)
  • 3 large eggs
  • 2 tablespoons milk (I use hi-lo which is low fat)
  • Salt and pepper (I don't use salt but I am generous with freshly ground pepper)
  • 1 cup grated cheese (I use tasty or cheddar)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Combine egg and milk adding salt (if using) and pepper and whisk well together.

  • Step 2: Melt butter in frypan/skillet over a medium heat and cook mushrooms till tender and there is no liquid, transfer to a plate.

  • Step 3: Put the tortilla into the frypan/skillet, brown on one side and turn.

  • Step 4: Scatter cooked mushrooms over the tortilla and half the cheese.

  • Step 5: Pour eggs over the mix and rest of cheese.

  • Step 6: Pull the egg mix from the edge of the frypan/skillet and swirl the uncooked mix to the edge, when nearly cooked (will still be wet at the centre), put under the grill/broiler and finish cooking till set, halve if serving two.

  • Step 7: Slide onto plate/plates and serve.

  • Step 8: VARIATIONS - I have since made this several times and sometimes changing it for what I have on hand, for instance instead of a tortilla I have used flat bread, wraps or a thin pizza base and for other ingredients I have added crispy bacon, onion, tomato or used a mix of cheeses (sharp cheddar, parmesan and mozzarella). You could also make smaller ones by purchasing or making smaller tortilla wraps.
