Ingredients

The ingredients are:
  • 1 kg chicken legs (drumstick)
  • 810 grams crushed tomatoes (canned)
  • 80 grams kalamata olives (pitted)
  • 100 fresh grams mushrooms (sliced)
  • 1 yellow onion (chopped)
  • 2 tablespoons chopped parsley (roughly chopped)
  • 4 cups rice (cooked)
  • Salt and pepper (to taste)

How to Make

  • Step 1: Preheat oven to 160C (low heat).

  • Step 2: Combine drumsticks, tomatoes, olives, onions and mushrooms in a casserole dish.

  • Step 3: Season with salt and pepper and then cover.

  • Step 4: Place in oven and cook for approximately 1 hour to 1 hour 15 minutes, or until chicken is falling off the bone.

  • Step 5: Serve over rice and garnish with roughly chopped parsley.
