Ingredients

The ingredients are:
  • 2 to 2 1/2 cups fresh white mushrooms
  • 2 to 2 1/2 cups fresh crimini mushrooms
  • 1/2 pound lean ground beef
  • 1/2 teaspoon seasoned salt
  • Freshly ground pepper, to taste
  • 2 tablespoons oil
  • 1 small yellow onion, chopped
  • 1 1/2 cups ricotta cheese
  • 1/2 teaspoon dried oregano (rubbed)
  • 1/2 teaspoon dried basil (rubbed)
  • 2 whole wheat tortillas (12-inch)
  • 2 cups grated Monterey Jack cheese
  • Arugula (optional)

How to Make

  • Step 1: Finely chop mushrooms. Set aside.

  • Step 2: In large skillet over medium-high heat cook ground beef with salt and pepper. Drain, if necessary. Season with pepper. Remove from pan. Set aside.

  • Step 3: In same skillet heat oil over medium heat. Add mushrooms and onions. cook and stir 5 minutes or until onions are tender and moisture evaporates. Add cooked beef to skillet Mix well. Set aside.

  • Step 4: In small bowl combine ricotta cheese, oregano and basil.

  • Step 5: Place tortillas on a baking sheet. Divide ricotta cheese mixture evenly onto two tortillas. Spread evenly. Layer equal amounts of mushroom beef mixture on top. Top with grated cheese.

  • Step 6: Bake at 400 degrees F for 8-10 minutes or until crust is golden brown and cheese is melted. Top with Arugula if desired.
