  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 2 1/2 cup all-purpose flour
  • 4 tablespoons cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 cups grated zucchini (about 1 large or 2 small)
  • 1/4 to 1/3 cup chocolate chips
  • 1/4 cup chopped walnuts

How to Make

  • Step 1: Preheat oven to 325 degrees, grease a shiny 9x13 pan and grate zucchini.

  • Step 2: In mixer, cream butter, oil and sugar. Add eggs, vanilla and buttermilk, mixing well.

  • Step 3: In separate bowl, whisk together dry ingredients, add to creamed mixture.

  • Step 4: Stir in zucchini and pour into prepared pan.

  • Step 5: Sprinkle chocolate chips and walnuts on top, bake about 40 minutes, or until done.
