Ingredients

The ingredients are:
  • 1 1/2 cups all-purpose flour (plain)
  • 1 teaspoon baking powder
  • 2 large eggs
  • 3/4 cup caster sugar
  • 125 grams butter (room temperature chopped)
  • 3/4 cup buttermilk
  • 2 whole lemons (finely grated rind only)
  • VANILLA GLAZE
  • 1 cup icing sugar (soft mix sifted)
  • 30 grams butter (melted)
  • 2 tablespoons water (boiling)
  • 1 teaspoon vanilla extract (essence)

How to Make

  • Step 1: Preheat oven to 170C or 150C fan forced.

  • Step 2: Grease and line a 11cm x 23cm pan.

  • Step 3: Sift together flour and baking powder.

  • Step 4: Place eggs and caster sugar into a food processor and process until pale and then add butter and process until thick and creamy.

  • Step 5: Add buttermilk and rind and pulse until combined and then add flour mixture and pulse until a batter forms.

  • Step 6: Fill prepared pan and bake for 40-45 minutes or until a skewer inserted comes ouit clean.

  • Step 7: Cool in pan for 10 minutes.

  • Step 8: Meanwhile make Vanilla Glaze.

  • Step 9: Combine all ingredients in a bowl until smooth.

  • Step 10: Remove cake from pan and brush glaze over the cake.

  • Step 11: Cool cake completely on a wire rack before serving.
