Ingredients

The ingredients are:
  • 1 cup hoisin sauce (or sweet chilli)
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1 teaspoon grated gingerroot (freshly grated)
  • 1 garlic clove (minced)
  • 3 pounds chicken legs (12 chicken legs)
  • 1 tablespoon oil (vegetable oil)
  • 1 cup snow peas (16 to 20, topped and tailed)
  • 2 to 3 spring onions (scallions finely sliced on diagonal) (optional)

How to Make

  • Step 1: Preheat oven to 180°C.

  • Step 2: Mix together hoisin, soy, honey, ginger and garlic and add the chicken drumsticks and toss well to coat.

  • Step 3: Put a sheet of baking paper/parchment onto 1 ot 2 baking trays and place drumsticks on top (in one layer).

  • Step 4: Spoon a little sauce over the top of each drumstick/leg and cook in oven for about 30 to 45 minutes until cooked through, turning once.

  • Step 5: Heat oil in a wok (or large non stick frying pan) and briefly toss snowpeas until tender.

  • Step 6: To serve, mound snowpeas on individual plates and top with chicken, cooking juices and spring onion.
