  • 1 teaspoon vanilla extract
  • 1 cup pumpkin (not pumpkin pie mix)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: In a large bowl cream together sugar, applesauce, and vanilla.

  • Step 3: Stir in pumpkin, set aside.

  • Step 4: In another bowl combine flour, baking soda and powder, salt, cinnamon and allspice. Stir into creamed mixture and mix well.

  • Step 5: Drop by spoonfuls onto ungreased baking sheet, about 2 inches apart.

  • Step 6: Bake for 18 to 22 minutes.

  • Step 7: Cool on a wire rack.
