  • Hearts of palm, drained, rinsed (one 14 ounce can)
  • 2 medium tomatoes, seeded and chopped
  • 3 large garlic cloves, finely minced
  • 2 green onions (use white and green parts, chopped)
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 2 ounces parmesan, freshly shaved

How to Make

  • Step 1: Cut the hearts of palm into 1/2 inch slices
