Ingredients

The ingredients are:
  • 1 pound red potatoes (fresh, not old)
  • 2 garlic cloves
  • Water, to cover potatoes
  • 2 teaspoons kosher salt (for boiling, don't increase for more servings)
  • SMASH
  • 2 tablespoons butter
  • 2 tablespoons cream cheese
  • 2 tablespoons sour cream
  • 2 tablespoons milk
  • 1 large egg
  • 1/8 teaspoon kosher salt
  • 1 dash fresh ground pepper
  • GARNISH
  • Minced chives or parsley
  • Paprika
  • OPTIONAL SPICES
  • 1 dash Italian seasoning
  • 1 dash onion powder
  • 1 dash garlic powder
  • LOADED
  • 8 ounces cheddar cheese (shredded, or jack)
  • 6 bacon slices (cooked and crumbled)
  • 4 green onions (sliced)

How to Make

  • Step 1: Wash potatoes, remove eyes and bad spots. Do not peel. Cut in half or large chunks. Put in large, heavy pot. If using garlic, peel cloves and add to water for boiling, along with salt. Cover, bring to a boil, then reduce heat low and simmer for 20 minutes or until potatoes are fork tender.

  • Step 2: Drain potatoes and put back into pot, with stove still on low. Add remaining ingredients and mash in the pot, using a hand-held potato masher. Be careful adding the egg, mix it in quickly so it doesn't cook.

  • Step 3: Add additional milk as needed. Taste and adjust seasonings. Top with paprika and either parsley or chives.

  • Step 4: For loaded potatoes, add cheese and bacon, garnishing with green onions.
