Ingredients

The ingredients are:
  • TOPPING
  • 1/2 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 1/2 tablespoons granulated sugar
  • 1/2 tablespoon unsalted butter, softened
  • BREAD
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1 cup pumpkin (canned, not pie filling)
  • 1/3 cup oil (vegetable oil)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 large apple, peeled,cored and chopped (a tart apple such as Granny Smith)
  • 1/2 cup pecans, chopped (optional, or walnuts)

How to Make

  • Step 1: Combine all the topping ingredients to form a crumb like mixture. Set aside.

  • Step 2: Preheat oven to 350 degrees F. Coat a 9x5-inch loaf pan with nonstick cooking spray.

  • Step 3: Sift flour, salt, baking soda, cinnamon, nutmeg, cloves and allspice together and set aside.

  • Step 4: In another bowl, mix together pumpkin, oil, sugar, and eggs with mixer. Add the flour mixture to the pumpkin mixture and mix well.

  • Step 5: Fold in the apples and nuts. Put the batter in the pan and sprinkle the topping evenly over the top of the loaf.

  • Step 6: Bake on the middle rack of the oven for 50 minutes or until a toothpick comes out clean.

  • Step 7: Cool in pan for 45 minutes and then remove to rack.
