Ingredients

The ingredients are:
  • 2 bacon slices (chopped)
  • 1/2 cup portabella mushrooms, sliced
  • 1/2 cup wild rice
  • 1 1/3 cups chicken bouillon (see note)
  • 2 green onions, sliced

How to Make

  • Step 1: In good-sized saucepan over medium-high heat, fry bacon until crisp. Remove from pan and set aside.

  • Step 2: Add mushrooms and rice to pan, saute for a few minutes, stirring constantly.

  • Step 3: Add bouillon and bring to a boil. (Add bouillon in amount of water your rice package calls for.)

  • Step 4: Cover and reduce heat to low, simmering for 45 minutes. No peeking! At 45 minutes, check to see if rice is done. If it's not, put lid back on and continue to cook.

  • Step 5: Stir in bacon and most of green onion, garnish with remaining green onion.
