Step 1: Preheat oven to 300°F, grease a baking sheet, line with waxed paper and grease again.
Step 2: Beat egg whites until they form soft peaks.
Step 3: Gradually add the icing sugar, beating until the mixture forms stiff peaks.
Step 4: In a separate bowl, mix together the almonds and cinnamon then gently fold into egg mixture
Step 5: Spoon mixture into a decorating bag fitted with a large, round icing tube and pipe small amounts onto the prepared baking sheet.
Step 6: Bake for 20 to 25 minutes or until dry.
Step 7: Cool and store in an airtight container to mellow for about 1 week before serving.
