Ingredients

The ingredients are:
  • 2 pitas (whole wheat pita breads)
  • 1 1/2 cups chicken, shredded (cooked, warmed up)
  • 2/3 cup barbeque sauce (use your favorite)
  • 3 oz gorgonzola cheese, crumbled (you can use bleu cheese if you prefer)
  • 2/3 cups celery, diced (cut lengthwise and fine diced and don't forget the leaves, also chopped)
  • 1/4 cup red onion, thin sliced
  • 1 to 2 teaspoons hot sauce (texas petes, crystal, tabasco; use your favorite), more of less to taste
  • 2 teaspoons oil (olive oil)
  • Salt and pepper

How to Make

  • Step 1: Pita Bred ... Brush one side of the pita with oil and season with salt and pepper. Bake on the middle shelf of a 425 degree oven for 5 minutes until slightly crisp and golden brown.

  • Step 2: Chicken ... Microwave for 30 seconds just to warm it up.

  • Step 3: Toppings ... While the pitas are still warm, brush the BBQ sauce on the side you seasoned. Top with with the chicken, red onions and cheese and drizzle on a little hot sauce. Go easy on the hot sauce, you can always add more after it comes out of the oven.

  • Step 4: Bake ... This time, lay a piece of foil down in the oven and place the pitas on that - you don't want the crust to burn. Bake another 5-7 minutes.

  • Step 5: Finish ... Top with the diced celery, celery leaves and a few more drizzles of hot sauce if you like. ENJOY!
