Ingredients

The ingredients are:
  • 500 grams dry pasta (recommend large spirals)
  • 420 grams dried beans (four-bean mix)
  • 425 grams cooked tuna (in water)
  • 250 grams cherry tomatoes
  • 1/4 cup gherkin pickles
  • 1/2 cup mayonnaise (whole-egg)
  • 2 teaspoons white vinegar
  • 1/4 cup fresh parsley (freshly, chopped)

How to Make

  • Step 1: Drain four-bean mix, rinse and drain.

  • Step 2: Drain and flake tuna.

  • Step 3: Quarter cherry tomatoes.

  • Step 4: Finely chop gherkins.

  • Step 5: Cook pasta in a large pot of boiling salted water as per manufacturer’s instructions until al dente. Drain well.

  • Step 6: Place pasta, beans, tuna, cherry tomatoes and gherkins in a large bowl.

  • Step 7: Whisk mayonnaise, white vinegar and fresh parsley in a small bowl until combined. Season with salt and pepper.

  • Step 8: Add mayonnaise mixture to pasta, tossed until combined.

  • Step 9: Serve pasta salad with fresh fruit (a complete and healthy lunch for adult or child).
