Ingredients

The ingredients are:
  • 2 tablespoons oil (olive oil)
  • 1/2 cup diced prosciutto ham (finely diced)
  • 1 cup mushrooms, sliced
  • 1 teaspoon garlic, minced
  • 1/4 cup yellow onion, chopped
  • 1/4 cup black olives, chopped
  • 1/3 cup white wine
  • 1/3 cup chicken broth
  • 1 tablespoon fresh parsley, chopped
  • 4 large eggs
  • 6 tablespoons parmesan cheese, grated
  • 1/2 pound cooked spaghetti (or 2 spaghetti squash ,baked)

How to Make

  • Step 1: Heat the oil in skillet. Add prosciutto, mushrooms, onion, garlic and olives. Sauté until mushrooms are tender.

  • Step 2: Add the wine and chicken broth and bring to a boil. Simmer over high heat until liquid is reduced by half. Add parsley.

  • Step 3: Break egg into mushroom mixture and stir until egg is cooked.

  • Step 4: Add Parmesan cheese and mix well.

  • Step 5: Add cooked spaghetti and toss.

  • Step 6: Put in baking dish, brown for 10 minutes at 425 degrees F.
