Ingredients

The ingredients are:
  • 24 bay leaves, crumbled
  • 3 tablespoons cardamom pods, black
  • 2 1/2 tablespoons cumin seeds
  • 2 tablespoons black peppercorns
  • 1 1/2 tablespoons cardamom pods, green
  • 2 teaspoons ajwain seeds
  • 2 teaspoons cloves, whole
  • 1 cinnamon stick, 3"-4" broken into pieces

How to Make

  • Step 1: Over medium heat in a heavy skillet toast spices swirling often, until fragrant (2 minutes).

  • Step 2: Let cool. Working in batches process through a spice mill. Sift through a medium mesh strainer, stir to combine.

  • Step 3: Can be stored in an air tight container at room temperture for one month.
