Ingredients

The ingredients are:
  • BASE
  • 1 cup self raising flour
  • 1/2 cup brown sugar
  • 3/4 cup dessicated coconut
  • 125 grams butter (4oz, melted)
  • FILLING
  • 395 grams condensed milk
  • 1 tablespoon butter
  • 2 tablespoons golden syrup

How to Make

  • Step 1: Preheat oven to 180C/160Cfan forced/350°F.

  • Step 2: Line a slice tray with some baking/parchment paper (scrunch up the paper before putting it into slice tray (I use a 27cm x 18cm approximately 10 1/2" x 7"), making sure it hangs out on the long side to become a handle for removing.

  • Step 3: For base - Mix all ingredients together and then press firmly into a tray (I use one 27cm x 18cm - approximately 10 1/2" x 7").

  • Step 4: Bake for 10 to 15 minutes (should have a slight golden colour and still soft to the touch) and then let cool while making the filling.

  • Step 5: Filling - Put all ingredients into a small saucepan and cook over low heat till butter melted and well combined and takes on a golden colour (about 3 to 5 minutes).

  • Step 6: Pour over biscuit base and return to the oven for about 10 minutes.

  • Step 7: Let cool completely before cutting.
