Step 1: In saucepan, cover zucchini with water and cook until tender, about 15 minutes. Meanwhile, preheat oven to 350 degrees and grease a 8x8 casserole dish.
Step 2: In skillet, saute onions in butter. Remove from heat and stir in zucchini, salt, pepper and pinched bread. Then stir in egg and first portion cheese.
Step 3: Pour into casserole dish and bake at 350 degrees for 30 minutes. Add remaining cheese 10 minutes before casserole is done.
