Ingredients

The ingredients are:
  • 4 medium zucchini
  • 1/2 cup chopped yellow onion
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 bread slice (pinched into 1/2" cubes)
  • 1 large egg (slightly beaten)
  • 1/2 cup shredded cheddar cheese
  • TOPPING
  • 1/4 cup shredded cheddar cheese (not until end)

How to Make

  • Step 1: In saucepan, cover zucchini with water and cook until tender, about 15 minutes. Meanwhile, preheat oven to 350 degrees and grease a 8x8 casserole dish.

  • Step 2: In skillet, saute onions in butter. Remove from heat and stir in zucchini, salt, pepper and pinched bread. Then stir in egg and first portion cheese.

  • Step 3: Pour into casserole dish and bake at 350 degrees for 30 minutes. Add remaining cheese 10 minutes before casserole is done.
