Step 1: In a large 12 quart heavy bottom pot over medium high heat add ground beef, yellow onion, 2 teaspoons kosher salt and pepper. Cook until beef is browned, drain drippings if necessary. Add in all the remaining ingredients. Bring to a boil. Reduce to simmer. Simmer partially covered for 1 1/2-3 hours (the flavor gets better if simmered a longer time, if it gets to thick add in more broth or water and keep cooking).
Step 2: Season with more salt if needed during cooking. Serve.
