Ingredients

The ingredients are:
  • 2 pounds ground beef
  • 1 medium yellow onion, diced
  • 2 teaspoons kosher salt (more added while cooking the chili if needed)
  • 1 teaspoon ground black pepper
  • 4 cans (8 ounces each) tomato sauce
  • 1 cup beef broth (or water)
  • 2 cans (15.25 ounces each) pinto beans, rinsed and drained
  • 2 cans (15.25 ounces each) kidney beans, rinsed and drained
  • 2 cans (14.5 ounces each) diced tomatoes, undrained (fire roasted with garlic)
  • 1 can (7 ounce) green chiles (roasted, peeled and diced)
  • 2 teaspoons onion powder
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder (optional)
  • 2 tablespoons chili powder (New Mexico chili powder)
  • 1 tablespoon paprika (smoked paprika)
  • 1/2 to 1 teaspoon crushed red pepper flakes (Optional, if you like it spicy)

How to Make

  • Step 1: In a large 12 quart heavy bottom pot over medium high heat add ground beef, yellow onion, 2 teaspoons kosher salt and pepper. Cook until beef is browned, drain drippings if necessary. Add in all the remaining ingredients. Bring to a boil. Reduce to simmer. Simmer partially covered for 1 1/2-3 hours (the flavor gets better if simmered a longer time, if it gets to thick add in more broth or water and keep cooking).

  • Step 2: Season with more salt if needed during cooking. Serve.
