Ingredients

The ingredients are:
  • 2 1/2 pounds raw boneless chicken breasts (or thighs)
  • 4 green onions
  • YAKITORI SAUCE
  • 6 ounces low-sodium soy sauce
  • 3 ounces chicken stock
  • 3 ounces sake (or dry sherry)
  • 2 ounces mirin (or rice wine)
  • 2 ounces granulated sugar

How to Make

  • Step 1: Soak wooden skewers and preheat grill.

  • Step 2: Combine sauce ingredients in saucepan and bring to a boil for five minutes. Split into two parts - one for basting and one for serving. That way you won't have any raw chicken bacteria transferred over at serving. Set aside.

  • Step 3: Meanwhile, chop chicken and green onions into bite sized pieces. Thread alternately on skewers.

  • Step 4: Brush skewers with basting sauce and place on grill. Turn and bast often. When done, brush again with basting sauce. Serve warm with sauce reserved for serving.
