Ingredients

The ingredients are:
  • 4 to 5 pounds Boston butt pork shoulder
  • 1 can (4 ounce) chipotle chiles in adobo
  • 1 can (14 ounce) tomato sauce
  • 6 ounces beer
  • 1/4 cup balsamic vinegar
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 1 teaspoon seasoning salt
  • SERVE WITH
  • 8 to 12 bread buns (sandwich buns)
  • 2 to 3 cups coleslaw

How to Make

  • Step 1: Puree chipotle peppers with adobo sauce until smooth. Combine with remaining ingredients and pour over pork in large crock pot.

  • Step 2: Start crock pot at high for 10 minutes, then turn to low and cook at least 12 hours.

  • Step 3: Once pork is falling apart, remove from cooker and wrap in foil. Set aside.

  • Step 4: Remove fat layer from liquid with a gravy separator or turkey baster. Transfer sauce to a saucepan and simmer on med-low heat until it thickens. Adjust seasoning to taste.

  • Step 5: Pull pork apart with 2 forks, removing excess fat and bones, if any.

  • Step 6: Put meat back in crock pot on warm and stir in sauce.

  • Step 7: Serve on a warm roll or bun with cole slaw.
