Ingredients

The ingredients are:
  • 2 unbaked (14 ounces) pie pastry (9-inch pie crusts, chilled)
  • 4 tablespoons butter
  • 1 3/4 cups brown sugar
  • 1/4 teaspoon salt
  • 8 large eggs
  • 1 1/3 cups heavy whipping cream
  • 2 cups corn syrup (light)
  • 2 teaspoons vanilla extract
  • 12 ounces pecans, chopped (2 2/3 cups, chopped)

How to Make

  • Step 1: Preheat oven to 450 degrees and chill pie crusts. If making only 1 pie, halve recipe.

  • Step 2: In mixer, cream butter, beat in sugar and salt. Add eggs, one at a time, beating after each. Mix in remaining ingredients, except pecans. When well mixed, add pecans, using lowest setting on mixer.

  • Step 3: Pour filling into pie shells, but don't overfill. You can bake any extra in a small Pyrex bowl at the same time as the pies.

  • Step 4: Cover edge with a guard and place in oven. Bake for 10 minutes.

  • Step 5: Reduce heat to 350 degrees and leave the crust guard on.

  • Step 6: Bake for 35-40 minutes more or until set. (My oven takes a few minutes longer than 40.) Pie is set when only the very center is jiggly.

  • Step 7: Cool on rack on counter until serving. Refrigerate leftovers.
