Step 1: Dressing ... Add everything (except the bacon); as well as a pinch of both salt and pepper, to a food processor, and pulse to combine. Make sure that everything is completely mixed through. Taste and re-season if necessary; and, pulse once again. Then, add the bacon, and pulse just until the bacon is combined. If you don't have a food processor, make sure to finely chop the scallion and the herbs.
Step 2: Serve and ENJOY! ... Transfer to a small serving bowl or jar, and refrigerate until chilled. I keep mine in a small mason jar. I think it is best after a few hours; although, it can be served immediately. I prefer it served chilled. Will last for 4-5 days in the refrigerator. I usually make enough for 2-3 nights of salads. It is delicious!
