Step 1: Preheat oven to 200C/180C fan forced and line a large baking tray with baking paper.
Step 2: Place potatoes in a bowl and add oil, rosemary, thyme and garic and season with salt and pepper and then toss to coat.
Step 3: Spread the potatoes mixture on prepared tray in a single layer.
Step 4: Roast for 50 to 60 minutes until golden and crisp and serve sprinkled with extra thyme sprigs.
