Ingredients

The ingredients are:
  • 1 1/2 pounds ground beef
  • 1 yellow onion, chopped
  • Salt
  • Corn tortillas (12)
  • 1 1/2 pounds longhorn cheese, grated
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cans (8 ounces each) taco sauce (or enchilada sauce)
  • 1/2 cup green chiles, chopped

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: In a skillet over medium high heat saute the ground beef; drain off fat; season with salt and then add the onions and cook until onions are translucent.

  • Step 3: Lightly fry tortillas and drain on paper towels.

  • Step 4: On each tortilla place 1 tablespoon each of meat, grated cheese, sour cream and the cottage cheese; roll tortillas up and plan in a 12 x 7 inch baking dish with the seam side down.

  • Step 5: Mix the taco sauce with the green chiles and pour over the rolled tortillas.

  • Step 6: Sprinkle with remaining cheese.

  • Step 7: Bake for 40 minutes or until done.
