Ingredients

The ingredients are:
  • 2 large carrots (cut in half peeled; then, cut in ribbons using a vegetable peeler)
  • 1 small parsnip (cut in half peeled; then, cut in ribbons using a vegetable peeler)
  • 1/4 cup goat cheese, crumbled (Feta can be used)
  • 3 tablespoons chopped pecans
  • 1/4 cup mint leaves, torn
  • 1 tablespoon fresh parsley, chopped
  • DRESSING
  • 4 tablespoons oil (olive oil)
  • 1 1/2 tablespoons balsamic vinegar
  • 1/2 large orange juiced
  • 1/2 teaspoon orange zest
  • 2 tablespoons honey
  • Kosher salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Dressing ... Add all the ingredients to a small bowl or measuring cup; and, mix to combine. Refrigerate at least 30 minutes before adding to the salad.

  • Step 2: Salad ... Add the carrots, parsnips, pecans, parsley, mint, and dressing to a bowl; and, mix to combine. Then, add the cheese and lightly toss. I like to finish with extra pepper (just my preference).

  • Step 3: Serve and ENJOY! ... A simple side dish. Nothing fancy, nothing hard; just a nice, simple salad!
