Ingredients

The ingredients are:
  • SALAD
  • 6 chicken tenders
  • 3 cups Romaine lettuce, torn into bite size pieces
  • 1 large Brandywine tomato, cut into thin wedges
  • 2 slices red onion, 1/4" thick, separated into rings
  • 1/4 cup chopped pecans (toasted)
  • 2 large eggs (hard-boil, halved)
  • Colby cheese (2 wedges)
  • DRESSING
  • 4 tablespoons oil (salad/vegetable oil)
  • 1 1/2 tablespoon fresh squeezed lemon juice
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon honey
  • Salt & pepper to taste
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon garlic powder

How to Make

  • Step 1: Coat chicken tenders with seasoned flour.

  • Step 2: Melt 1/4 cup butter in baking pan.

  • Step 3: Place chicken tenders in pan and turn to coat.

  • Step 4: Bake in preheated 350 oven for 20 minutes, turning once.

  • Step 5: Chop into bite size pieces.

  • Step 6: Toast pecans in single layer on baking sheet for 6-8 minutes, stirring once.

  • Step 7: Whisk together dressing ingredients in small serving bowl.

  • Step 8: To Serve: Divide torn lettuce on 2 serving plates. Arrange tomato wedges around outer edge of plates.

  • Step 9: Place onion rings in center.

  • Step 10: Place 1/2 of the cooked tenders on each plate.

  • Step 11: Sprinkle with toasted pecans.

  • Step 12: Serve with breadsticks and dressing on the side.

  • Step 13: Suggested Wine: Sauvignon Blanc
