Ingredients

The ingredients are:
  • 1 package (8 ounce) Velveeta, cubed (cut into 1/2-inch cubes)
  • 1 can (10 ouce) diced tomatoes, drained (use only RoTel Original Diced Tomatoes & Green Chilies)
  • 4 cups cooked chicken, shredded
  • Pickled jalapeno slices (canned or from the jar, and use amount that you want)
  • 1/3 cup sliced green onions
  • 6 flour tortillas (10 inch)

How to Make

  • Step 1: Combine Velveeta and drained tomatoes in 1-1/2-quart microwave-safe bowl; cover. Microwave on MEDIUM , about 2 minutes; stir. Continue microwaving on MEDIUM 2 minutes more or until Velveeta is melted. Add chicken and onions; mix well.

  • Step 2: Spray large nonstick skillet with cooking spray; heat over medium-high heat. Place 1 tortilla in skillet. Spoon about 2/3 cup chicken mixture onto bottom half of tortilla, the sprinkle some pickled jalapeno slices over the chicken mixture.

  • Step 3: Fold the tortilla over to cover chicken mixture. Cook 1 minute on each side or until golden brown on both sides. Repeat with remaining tortillas and chicken mixture.

  • Step 4: Cut into wedges to serve.
