  • The following recipe serves 4-8 people.

Ingredients

The ingredients are:
  • 1 1/2 cups broccoli, cut in bite size pieces (1 small bunch)
  • 1 small cauliflower head, cut in bite size pieces (approx 1 1/2 cups)
  • 1 medium carrot, cut in matchsticks (you can even buy them pre-cut these days)
  • 1 small red onion, cut in half and thin sliced
  • 2 to 3 scallions, diced (white and green parts)
  • 2 to 3 slices bacon sliced (cooked, diced)
  • DRESSING
  • 1/4 cup salad dressing (Miracle Whip or salad dressing)
  • 2 tablespoons oil (vegetable oil, use a neutral oil)
  • 1 tablespoon red wine (or white wine vinegar)
  • 1 teaspoon dijon mustard
  • 1 to 2 teaspoons granulated sugar (optional - I don't use any)
  • 1/2 teaspoon all-purpose seasoning (I use Badia Complete - Penzeys, McCormicks - use your favorite brand)
  • Kosher salt to taste
  • Pepper to taste
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Bacon ... You can cook the bacon using any method you like. Oven, stove top, or microwave. Personally, for this small of an amount, I dice the bacon; then, pan saute. It only takes 3-4 minutes until brown and crisp. Then, transfer to a plate lined with a paper towel to drain.

  • Step 2: Dressing ... Add the Miracle Whip (salad dressing), oil, vinegar, dijon mustard, sugar (which is optional), all purpose seasoning, salt, and pepper to a small bowl; and, mix to combine.

  • Step 3: Vegetables ... Add the broccoli, cauliflower, carrots, onion, scallions, bacon, and dressing to a large bowl and toss. Check for seasoning once again; and. add more salt and pepper if necessary. Cover with plastic wrap, and refrigerate at least 30 minutes or longer, until chilled.

  • Step 4: Serve and ENJOY! ... Transfer to a serving bowl and dig in.
