  • The following recipe serves 4-8 people.

Ingredients

The ingredients are:
  • 5 to 6 medium celery ribs, cut in 3" pieces
  • 1/2 cup ricotta cheese
  • 1/8 cup dried fruit, diced (apricots, cherries, figs, etc)
  • 1 teaspoon orange zest
  • 2 to 3 tablespoons walnuts, fine chopped (or pecans)
  • 2 teaspoons light brown sugar
  • Pinch of salt
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Filling ... Add the ricotta, fruit, orange zest, brown sugar, and a pinch of salt to a small bowl; and, mix to combine. Apricots and cherries are my favorite; but, figs, cranberries, dates, blueberries, mango, etc., are all delicious - use your favorite fruit. Cover with plastic wrap and refrigerate 30-60 minutes to chill.

  • Step 2: Celery ... Cut the celery in 3" pieces, wipe clean; then, stuff with the filling. Then, sprinkle the nuts over the top.

  • Step 3: Serve and ENJOY! ... They are a perfect snack; but, also great as appetizers for a potluck, dinner party, or BBQ.
