Ingredients

The ingredients are:
  • 1/2 pound butter
  • 1 whole lemon, quartered
  • 2 garlic cloves, whole
  • 2 avocados
  • 1 1/2 pounds potatoes
  • Salt
  • Pepper

How to Make

  • Step 1: Peel and quarter the potatoes, then wash them thoroughly.

  • Step 2: Place the potatoes in a large pot with enough cold, salted water to cover them and bring to a boil. Reduce heat and simmer for 20 min, or until cooked through, and drain.

  • Step 3: Meanwhile put butter, lemon and garlic in a saucepan over very, very low. Let it simmer for 20-30 minutes. Discard lemon and garlic.

  • Step 4: When potatoes are done, drain and mashed to your liking. Fold in avocado and butter.

  • Step 5: Season with salt and pepper to taste.

  • Step 6: If you like creamer mashed potatoes, you can add some milk.
