  • 2 teaspoons black pepper
  • 1 1/2 teaspoon paprika
  • 1/4 teaspoon poultry seasoning
  • FOR THE CRISPY BATTER
  • 2/3 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg yolk (beaten)
  • 3/4 cup water
  • FOR FRYING
  • Vegetable shortening

How to Make

  • Step 1: Seasoned Flour: Combine and set aside.

  • Step 2: Crispy Batter: Combine ingredients.

  • Step 3: Heat shortening to 365 degrees F.

  • Step 4: Moisten chicken pieces in water, shake off excess.

  • Step 5: Dip in seasoned flour, then batter, then back in seasoned flour.

  • Step 6: Fry for 15 to 18 minutes or until well browned.

  • Step 7: Drain on paper towels.
