Ingredients

The ingredients are:
  • 2 to 2 1/4 pounds chicken thighs (bone in and skin one, and drumsticks)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • MARINADE
  • 3 scallions, diced (white and green parts)
  • 1 shallot, thin sliced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons fresh lime juice
  • 1 tablespoon oil (vegetable oil)
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons chili sauce (spicy, or Sriracha sauce)
  • 2 tablespoon soy sauce (low sodium)
  • 2 tablespoons ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Garnish
  • 4 scallions (cut in 1/2" pieces on a diaganol, white and green parts)
  • 1 cup diced papaya (mango can be substituted)
  • 1 teaspoon lime juice
  • 1 teaspoon oil (olive oil)
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Marinade ... Add all the ingredients to a small bowl or measuring cup and mix to combine. Now, I love a ziploc bag to marinate - no clean up. But, you can also use a glass bowl too. Add the marinade and chicken to a ziploc bag, close, and shake - that simple. If using a bowl, make sure to mix the chicken so it is coated well; then, cover with plastic wrap. Marinate at least 4 hours, up to all day.

  • Step 2: Chicken ... Remove the chicken from the marinade; and, let it come to room temperature on the counter. Pat the chicken dry using a paper towel; then, season with salt and pepper.

  • Step 3: Grill ... Make sure to oil your grill well - whether you use a indoor or outdoor grill. Cook/grill the chicken on each side, until you get a nice char. Depending on the size of the thighs and drumsticks, your cooking time can vary from 12-20 minutes.

  • Step 4: Garnish ... Add the papaya, scallions, lime juice, olive oil, and a pinch of both salt and pepper to a small bowl and toss to combine.

  • Step 5: Serve, Plate, and ENJOY! ... Once the chicken is done; transfer to a serving platter; and, garnish with the fruit. It's a great dinner to grill!
