Step 1: Peel the ginger and turmeric and slice thinly on the diagonal. Use the side of the knife to smash them (exposing more surface area).
Step 2: Add the ginger and turmeric slices to a saucepan with 6 cups of water and bring to a boil. Turn the heat to low and simmer for 10 minutes.
Step 3: Add the cinnamon sticks, turmeric (only if using the dried ground turmeric), and cayenne. Simmer for another 10 minutes.
Step 4: Pour into a glass container for storage.
Step 5: To serve, strain into a mug. Serve hot or over ice.
Step 6: Stir in a spoonful of honey to taste, and a squeeze of lemon.
