Ingredients

The ingredients are:
  • 1 tablespoon oil
  • 1 1/2 pound Italian sausage (or ground beef)
  • 6 garlic cloves, fine minced
  • 1 large yellow onion, chopped
  • 2 medium carrots, chopped
  • 2 celery ribs, diced
  • 1 can (28 ounce) diced tomatoes (undrained)
  • 1 cup cooked red kidney beans
  • 1 cup cooked white kidney beans
  • 44 ounces beef broth
  • 2 teaspoons dried oregano
  • 2 to 3 tablespoons fresh parsley, chopped
  • 1 teaspoon hot sauce (Tabasco sauce)
  • 24 ounces pasta sauce (use your favorite)
  • 4 ounces dry shell pasta (or other small pasta)
  • Salt & pepper

How to Make

  • Step 1: Saute sausage meat and garlic in oil in large pot until beef starts to brown. Add onions, carrots, celery and tomatoes with the juice, and simmer for about 10 minutes.

  • Step 2: Drain and rinse beans and add to the pot. Also add beef stock, oregano, Tabasco, spaghetti sauce and small paste. Add chopped parsley. Simmer until celery and carrots are tender, about 45 minutes.

  • Step 3: Season with salt and pepper. Serve.
