Step 1: Combine in large stainless steel or enamel cooker the vinegar water and spices; bring to a boil, reduce heat and simmer 5 minutes.
Step 2: Meanwhile, cut melons in half, then deseed.
Step 3: Make melon balls or 1 inch squares.
Step 4: Remove pan from heat, add balls. Let stand 1 1/2 hours.
Step 5: Add sugar and bring to a boil. Reduce heat and simmer on low for 45 minutes to an hour until melon is slightly transparent.
Step 6: Pack melon into hot sterile 12 oz jars. Pour in hot syrup leaving 1/4 inch head space.
Step 7: Remove all air.
Step 8: Seal water bath for 10 minutes.
