Step 1: Burger ... Add the onions from the soup (reserving the liquid) to a bowl; along with the steak seasoning and beef. Mix well to combine; then, make 4 burgers and set them on a sheet pan, lined with parchment (for easy clean up). Using your thumb, press in the center of the burger to create a 'dimple;' this will prevent the burger on 'puffing' up during cooking; and create a nice flat burger. Then, cover with plastic wrap. I like to let them set at least 30 minutes before cooking.
Step 2: Sauce ... Add the mayonnaise, horseradish, dijon mustard, reserved liquid from the soup; and, the scallion to a small bowl; and, mix to combine. Cover and refrigerate until ready to use.
Step 3: Buns and Toppings ... Since the burger doesn't take long; make sure to have everything else ready to go. I get my cheese right from the deli - you can ask for a thicker slice which I love. Also, make sure to brush your buns with some melted butter, and toast or grill them. You want them warm and toasty. The onions - straight out of the can. But, they are fantastic on this burger - trust me!
Step 4: Grill ... First, let the burgers rest on the counter before grilling. Then, make sure to season the grill with oil; or, a non stick spray. Cook the burgers on the first side, 4-6 minutes until you get a nice char; then, flip. Do NOT flip until you get a nice char. Then, cook on the second side another 4-6 minutes until you get the doneness you like. The last couple of minutes, add the cheese, so it has a chance to melt. I like mine medium. I like to use an outdoor grill; but, an indoor grill pan, or saute pan, will work just fine. After the burgers are done. I usually remove from the heat, and cover; which will allow the cheese to melt.
Step 5: Buns ... This is usually when I toast the buns; especially, if I am using the outside grill. You can also do them in the oven if you want.
Step 6: Finish ... Add some of the sauce to the bottom bun, top with lettuce; the burger topped with cheese, more lettuce, fried onions, more sauce; and, finally the top bun.
Step 7: Serve and ENJOY! ... It's full of flavor too. The fried onions really do make it extra good; so, don't skip using those. Serve with whatever you enjoy. Potato salad, fries, or corn on the cob is what I would normally serve. Squish down for that crunch; and, enjoy that delicious burger.
